This is probably one of the best new restaurants in the valley. I had the Tuna confit and Cubano sandwiches and have not been let down. We also enjoyed Poutine, (sp) which the chef Noela was willing to come out and explain to us the origin of. It's fries cooked in a duck fat with a beef sauce and fresh cheese from a front range farm. This place is not to be missed, and if you live close by should be on your lunch radar all the time with its low prices.
Wonderfully fresh, original, reasonably priced food. All the elements I usually seek out in a restaurant. I am not much for white table cloth restaurants, and Fold certainly fit my criteria and it now ranks among one of my favorites. In fact, they served perhaps the best fish i have eaten in recent memory. Perfectly prepared with tasty rice cake underneath, and vanilla salt on top! Next time i pass through I hope to go for dinner, as we only had a chance to try the lunch menu. It is a little of the beaten path, but very close to downtown Carbondale. Amazing views of Mount Sopris too from their deck. All the staff made us feel welcome and ensured we had a great experience.
