The meats were amazing during the soft opening (around noon). This is the best BBQ I have had in Colorado. It was a soft opening today, so it's hard to say if their service and food will continue to be this good, but everything was on point today. It's Texas style BBQ, which means dry rubs and no sauces. The rubs were good without being overpowering and the meat was smoked to perfection. On the second visit, the meat wasn't amazing, but still good. The sides were just OK. This was an evening visit, so it's possible that everything is better closer to when they open. It's still the first week, so I'm hoping they can iron things out and be more consistent. So far, it seems like they're selling out around 6-7 PM.

Hanks opened their doors just a week ago. You wouldn’t know it by the way they provide excellent service. Their bbq is juicy and tasty. The reddish/pinkish ring when I bit into their ribs is there if that’s your first concern. We had the sampler platter and I couldn’t believe how every item on that tray was really good. A few favorites stood out: the chicken bbq was outstanding and juicy! Spareribs and Pulled Pork and sausages! Hank is the owners loving pets name. The owner and three of the amazing staff are from Texas. The Pit Master himself is Chris. Texas style bbq from legit Texans. It’s finally here in Denver! Location wise Hanks is deep in East Colfax. There’s parking in front and and I noticed a constant parade of cars and foot traffic from neighboring businesses as soon as they open at 11. An excellent sign for this new kid in town. Legit bbq with a legit crew who’s amazing at what they do. They have an outside patio that I can’t wait to use. Inside decor is sparse and clean. I love it! I’m sick of cluttered walls and elbow to elbow sitting arrangement. Here you have enough space to manhandle your chosen meat! Their sides will speak for themselves. We tried their Mac n Cheese, Collard Greens, Mashed Potatoes and Beans. The Mashed Potatoes is not the super fine one. They left a few nugs of potatoes for some structure when you bite into them. My fave are the two last ones with the Beans as my number one choice. A must have: their house drinks. Named after Willie Nelson’s songs. There’s three of them and they’re all really hard to put down now. So imagine drinking this refreshing trifecta during summer! I don’t think I’ll leave this joint standing up! There’s The Bridge Over Troubled Water. Pancho and Lefty. Hands on the wheel. No favorites! I love all three! We left full and happy! Overjoyed that the new addition to East Colfax is a cool kid!

The brisket is awesome. Frito pie was a huge hit. Baked potato was good.... a fresh potato would have been ideal, but I must give mad props to the tacos so tasty! They had the right amount of heat and flavor. We will be back for more!

I had almost given up hope of finding juicy brisket in Denver (assuming the high desert climate did not make for good meat juiciness), or the elusive beef rib. And then I found both! The barbecue gods smile this day. (Also check out dat smoke line 🤤) And the staff are great! It’s obvious they care deeply about their juicy meats. One of the chefs and I had a great chat about the interaction of the aforementioned high desert climate on brisket moistness. 10/10 recommend!

The BBQ was tender with a good smoked flavor. I was not happy with the way they prepare the take out orders. It may be that they were out of containers. I ordered 3, 2 Meat combos. They wrapped each meat item separately in foil and put them in a bag with all of the sides and sauces. The 4oz sides are small as well but we enjoyed our meals.

It's all best in show Texas BBQ: brisket, turkey, Thursday bologna sandwiches, hot links, etc. etc. Mac and cheese is my favorite side with some smoke and some kick to it. The people are as good as the food. Service is incredible. Support this great local new business! You won't regret it.

You can tell by the smell outside as you pull in, it's gonna be good. The guys up front were not noobs; they even asked whether I wanted my brisket lean, fatty or in between. Wow.... usually it's you get what you get with bbq joints. As they started to slice the brisket (pics attached) it was clear the meat had a great smoke ring and was moist. I tried the pork sausage and spare ribs as well. Result was spectacular, no sauce needed. With two businesses in the neighborhood I'm so glad a legit bbq spot found a home among us. I'll be back many times over!!!

Good brisket and beef rib. Kid liked the pork sausage. Not a lot of meat left at 5pm though. The sauce leaves something to be desired: very sweet and not smokey enough. Also thought they had a mustard barbecue sauce but it was just mustard.

This place is amazing! Great portions, food came out hot and delicious. This is 1lb of brisket, 1/2 rack of ribs and a cup of greens, potato salad and green beans. Comes with bread, tons of different sauces and sandwich fixings. Especially liked the pickled greens stems!

Don’t miss out on this BBQ. A new and much needed addition to the Denver BBQ scene. Chris stays true to his Spring, TX roots and delivers an incredible culinary experience at Hank’s. While the decor is straightforward and simple you literally won’t notice your surroundings once you start to eat. The sliced brisket was simple smoked perfection. Our hot sausage link surprised us with complexity and nuance. Yes, we’re foodies but even the sides at Hanks stand out for their flavor combos. Pinto beans are soaked in the most addictive mash we’ve ever had. I spent half of the meal trying to figure out just how they made the pinto beans that good so I could try it at home. While we were visiting an elderly gentleman spilled his drink. One of the gentleman working dropped everything to help them get situated, cleaned the table and even retired their food. That is Texas hospitality - if there’s anything we miss more than Texas it’s hospitality (and Stevie Ray Vaughan playing on the radio). Keep this up and I hope to visit you on Colfax for some time to come.

As always this place was great ! I tried the grilled cheese with brisket today and was not disappointed. It is now my official favorite sandwich here with a side of their delicious Mac and cheese. Staff was friendly and attentive as always. Thanks guys! Keep up the great work from all of us at Hotchkiss!

Great staff! Very friendly, attentive and helpful. Thanks to Katy! We ordered to go for Superbowl. Beef rib is a brontosaurus! 1/2 chicken as well. White meat chicken, not just dark. Wings from pterodactyl! Been to Kreutz and Blacks in Texas. Hank's is right up there for Denver. Main rub has a sweetness to it. Burnt ends we picked up more black pepper in the rub. Meat is well smoked over oak, moist and done perfectly. Nothing over done. For sides we tried mac and cheese, slaw, and potato salad. Mac and potato salad are good, mustard up front on the potato salad. Slaw was okay..just not our personal preference. We highly recommend Hank's for BBQ fans.

I love this bbq. I catered my daughter’s birthday with Hank’s. Now I’m having lunch while getting my tires changed for the winter at Big-O across the street. Is there anything more East Colfax? Survive COVID, Hank. Thrive. I can’t live without your brisket.
