Cozze in Bianco
Our mussels are the best around. We use only fresh mussels that have been rope grown in the icy-cold waters off the coast of prince edward island. Because rope-grown mussels never touch the ground, they are especially clean and sweet. Taste the difference for yourself with these steamed mussels tossed in white wine, lemon, basil, onion and garlic, then drizzled with our signature lemon butter sauce. So fresh, light and delicious, this combination of flavors is unforgettable. Make sure to order extra bread; you’ll definitely want it for dipping!

Great bruschette starts with great bread. Which is why we use only traditional focaccia bread in our recipe. From there, it’s all about the toppings, and we take great care in selecting ours. We use the ripest vegetables, the most flavorful herbs and our signature blend of extra virgin olive oil. It’s what makes our bruschette a carrabba’s favorite. Our bruscette siciliani (pictured above) features warm baked focaccia bread topped with juicy diced tomatoes, kalamata olives, red onion, fresh basil and parmesan cheese and drizzled with delicious red wine vinegar and extra virgin olive oil.

Mama Mandola's Sicilian Chicken Soup
This recipe came from Damian’s mother and johnny’s grandmother, grace mandola. It was always a favorite at Sunday night family dinners, and now it’s a favorite at our restaurant. Like mama mandola used to do, we make it from scratch with whole chickens, hearty pasta, fresh vegetables and a little kick. And as with all our soups, mama mandola’s sicilian chicken soup starts with the same five fresh ingredients – tomato, celery, carrot, onion and garlic. It’s hot, hearty, homemade and heavenly.

Our famous marsala sauce is one of the many we make from scratch every day. Our secret to this rich, flavorful sauce? Lombardo marsala wine. It's the only one we'll use! Though most often enjoyed on chicken, marsala sauce is also delicious on sirloin, pork chops and veal. Try it tonight!

Chicken Marsala
In most Italian restaurants, chicken marsala is sauteed. But here at carrabba’s, we grill it to lock in the flavor. Hot off the wood-fired grill, the chicken is topped with mushrooms, prosciutto and our delicious lombardo marsala wine sauce, we source the wine in our marsala wine sauce from the lombardo winery, the only family-owned marsala producer in Italy. Since 1881, they’ve been making the best marsala wine in the region. Their secret is aging the marsala in oak barrels for a year, which is longer than most producers!

You won’t find sirloin marsala just anywhere. But at carrabba’s, we love it! First we wood-grill our juicy USDA choice sirloin to perfection. Chicken Bryan
Chicken bryan is one of our most famous dishes and is named in honor of the texas town where the carrabba’s family settled after arriving from sicily. This signature dish consists of some of our favorite ingredients and grilling techniques passed down in the carrabba family, like mr. c’s special grill baste. Try this uniquely delicious combination of wood-grilled chicken topped with goat cheese, sundried tomatoes and our hand-prepared basil lemon butter sauce.

Feel transported to the Italian coast with our spiedino di mare. Enjoy your choice of wood-grilled shrimp or sea scallops, coated with olive oil and breadcrumbs before grilling to add flavor and keep the shrimp and scallops juicy. Topped with our lemon butter sauce, this is seafood unlike any you’ve ever experienced. In sicily, picchi pacchiu sauce is what cooks make for a quick tomato sauce with minimum cooking. At carrabba’s it gets the same attention as any of our delicious sauces. Like all our sauces, our picchi pacchiu sauce is made from scratch with crushed tomatoes, garlic, extra virgin olive oil and fresh basil. When finished, it is poured over fresh, bronze-cut tagliarini pasta imported from Italy. We choose tagliarini for its porous texture, which makes the sauce stick to it perfectly. Which we love, because you don’t want to leave any of this delicious sauce to waste!
Spaghetti and Meatballs
A classic for a reason. Enjoy hand-prepared meatballs served over a bowl of perfectly cooked spaghetti and made-from-scratch pomodoro sauce, these aren’t just any regular meatballs. For 25 years, we have been hand-rolling meatballs and continue to do so in all of our restaurants. Why? This technique ensures each meatball is perfectly light and well blended with the right consistency every time. The result is incredibly flavorful meatballs that make this everyday dish anything but. What’s not to love?
Linguine Pescatore
Enjoy a taste of the Italian coast with our linguine pescatore. This uniquely delicious combination is born from italian tradition. It starts with fresh linguine, the traditional pasta accompaniment to the seafood aplenty in this dish. And it’s finished with hand-prepared marinara sauce. Marinara got it’s name from the italian word for fishermen, “marinaio,” as fishermen would make sauces like this on board ship to complement their seafood. It’s still the perfect complement today. Taste it for yourself with a delicious bowl of freshly made linguine, juicy shrimp, sea scallops and mussels tossed in our spicy hand-prepared marinara sauce.
