One visit to Proof Bakery was all it took to make me a lifelong fan. It was incredible!
I had stopped somewhere else for lunch, not realizing they had deli sandwiches serve French Bakery style (wrapped in wax paper and ready to eat). So I will be back for one of those tasty looking sandwiches soon.
Instead, I focused on their baked goods, and I can honestly say that the three items I had were some of the best baked goods I have ever had, and that is not hyperbole.
The pistachio raspberry cake was perfection in a cake slice. The layers all had their own distinct flavors. The icing was sweet but not overpowering. Combined, it was a beautiful blend of tastes and textures. I think I know where I'll be getting a birthday cake this year...
Then I tried the almond financier, and my tastebuds were in heaven. I love a good creme based desert, and this one features a sweet, fluffy almond creme inside a light and flaky almond pastry.
I finished things off with a chocolate chip cookie. It was amazing as well.
It is going to be dangerous for me with a bakery this amazing this close to my home. Also, my dad will love that it is a co op, worker owned place. The world needs a lot more places like that.
I got the buttermilk biscuit which you can tell was made by scratch. It was good just didn’t have a strong buttery flavor that you would expect. The apple chausson was delicious as well. The fruit inside was so fresh. I tried this place because of the chocolate chip cookie and it was good it’s just I’m not a huge fan of sea salt on top of cookies. It just doesn’t do it for me. Give this place a try!
There are simply no words for how delicious everything I've tasted at this cafe is.
The sandwiches are divine! The quality, taste and price are the best I've seen in la.
My only comment guys, if the regular croissants are never enough for everyone, maybe that's a reason to make more of them? Logic

Their pull-apart croissant is by far the best croissant I’ve had outside of France. I don’t even like cinnamon and I ate the whole thing. Amazing. Probably the best bakery in LA.
Just spent two weeks in France , and sampled artisanal croissants bakeries etc in many cities throughout. Came back to LA, discovered Proof, and it takes me back to France. Went two days in a row, and agree , it’s simply the best bakery in LA. The craft and love is apparent in every bite… their pecan croissant is sublime, buttery , chewy, toffee notes, I can’t stop thinking about it… their ham and cheese is on another level. Def worth waiting in line , it’s simply that good !!!
Good stuff, gets busy. There’s free parking in the back or nearby
Was my favorite bakery in SoCal for a while. (Luna Sourdough in Yucca Valley change me into a sourdough croissant lover). Haven't found the staff very welcoming and always find it annoying you can't really see the pastries til you're pretty much the one being waited on. Still, definitely solid pastries and coffee. I used to say every single thing here was perfect but less so in the past couple of years.
I love this bakers cooperative in Atwater Village. The pastries are amazing and very creative. I love the sesame grape one so much. They have the best sandwiches that sell out decently quickly. The salami one with onion jam is the best!
This is my favorite bakery in LA! Everything is fresh - you really can't go wrong. Their croissants and scones are delicious, their pistachio strawberry cake is one of the best I've ever tasted, and their coffee is solid and the drinks menu includes rotating specialty drinks. It also has a nice vibe with friendly local staff and lots of regular customers. I recommend coming on the earlier side as they do sell out of things.
As a french person I’m very picky when it’s about french patisseries and viennoiseries.
I tried different ones in LA, never really felt like I was home.
This place has the best chocolate croissant I ever had in LA, and being able to order it in french it’s also a +.

The big down side regarding the chocolate croissant, croissant...is that if you go after 9.30am there is no more. Not sure why they don’t provide more as it’s the same problem everyday.
Proof Bakery is the best bakery in town. Particularly, their sandwiches are best of the best. You might complain they are tiny and expensive, but you know you will never get anything like that anywhere. Sandwiches are available only after noon (12pm). They also offer some high quality pastries and cakes. Side of the shop is a coffee bar - pretty nice if not the best. This is a small shop. Don’t expect an extensive list of stuffs but some quality goods. You will never be disappointed.
Proof bakery is one of our favorite places to eat. Their skinny sandwiches are always so delicious and unique, changing seasonally, with a cheese(vegetarian) and vegan option every day. Pastries, cakes, cookies, and bread are all amazing. This is an employee owned co-op, and you can see there's a real passion for their craft. Their baristas are always pulling delicious shots of espresso as well.
Don't skip this place!

Been a couple times to Proof Bakery, and easy to say my recent visit was the best! All the bakes were on point, lamination was beautifully done, and the canelé was pure perfection. The canelé is their signature item and you should absolutely get a couple for the road. The chocolate espresso cake was incredibly moist and 100% acceptable for breakfast (or so I tell myself). Also don’t leave without one of their chai shortbread cookies, it’s a stunner.
Went here to try the Chocolate Espresso Cake as seen on Worth it. Was delicious and met my expectations. The bakery itself has a cute chill vibe, despite no seating indoors. Lots of other breakfast and lunch items which looked good!
