Perhaps the most popular noodles in the world, fresh noodles come in a range of shapes & sizes, are enormously versatile--and ideal for a wide range of breakfast, lunch, & dinner dishes. Wok or other fryer-friendly, fresh noodles soak up, retain, & deliver the flavors of whatever they’re combined with. If boiled on their own, fresh noodles are better undercooked than over—simply because they are likely to be reheated & cooked again if you plan to stir-fry. Fresh noodles enjoy a unique, honored place in the history of chinese culture & cuisine. While rice was the day-to-day staple throughout china for thousands of years, noodles, the more expensive product, were served only on special occasions such as new year’s day or at family celebrations. Robert yee always remembered how, in his youth, he looked forward to birthdays & weddings, anticipating on those days, not only the wonderful flavor of noodles & their sauces, but also the warmth & happiness shared by his family at these events. The simple pleasure of eating noodles w/ his loved ones symbolized everything he valued & held dear, & these memories fueled yee’s drive to become an expert noodle maker himself. In chinese culture, the enjoyment of food that tastes, looks & smells good represents nothing less than the joy of life itself. The sharing of food is a basic & sacred act of bonding among chinese families & communities. It expresses gratitude for abundance, provision, sustenance, & the pleasure of satisfying the senses. To enjoy excellent food is to enjoy life.
Wontons & Pot Stickers
The word wonton–taken from the chinese words for “small dumpling”–is a centuries old food. Marco polo enjoyed these stuffed wraps on his travels to the orient back in the 13th century. Pan-fried or steamed, wontons & pot stickers add texture & flavor to a wide range of dishes–from fresh ravioli to any brothy soup. Every chinese new year’s day robert yee’s family gathered together to make pot stickers & hear him retell stories of his youth in china. And those delicious little wraps stuffed w/ meat & vegetables always tasted better to those who helped make them & keep the tradition alive.
