I must admit the concept of raw, vegan food was foreign to me. All I can say is I am so grateful to have an open mind to trying new things. My first exposure to Chef Marci and her amazing creations was in early September, about 2 months prior to the writing of this post.
My passion is nutrition. I understand the principles and benefits of plant based, raw foods. What I did not understand is how a skillful, creative chef like Marci can take simple, natural produce, other natural and homemade ingredients and deliver the most amazing culinary experience in a beautiful presentation. Best of all, it's very affordable.
The offerings include seasonal entrees (most or all are about $8.00), my favorites are the Bhuda Bowl which is by far the best and most beautiful salad you will ever experience (edible flowers!), the tacos - you will not believe these are vegan, and the alfredo sauce on yellow squash noodles will make you forget there is no butter or dairy in them. I highly recommend this artisan food establishment, it truly is a culinary experience that is good for you.
Juices - the green drink is a staple of existence for me. All the juice drinks are alive with nutrition and so delicious.
Blenders - creativity kicks in with these. I love the seasonality and availability aspects of the daily menu. It's dynamic, fresh and never boring.
Results - Once I discovered In The Raw Test Kitchen & Juice Bar, I decided to take the raw food challenge. Get this, in less than 60 days I have lost over 35lbs! The only change in my lifestyle was incorporating a couple of green drinks and an entree everyday. I still eat other foods, but my body seems to be quite happy with the nutrient dense foods I get from Chef Marci's establishment.
I would give it 10 stars if I could. This concept is needed here, it provides a healthy alternative. Thank you Chef Marci.
Went today for lunch and it was amazing. I got the Sicily Trio. and the Save Me Citrus drink. The Trio was literally the best food I have eaten in a very long time. The caprese was so good I didn't miss the actual mozzarella cheese. The lasagna stack had a depth of flavor and freshness that I've never experienced before. The pesto was good enough I wanted to scape my plate to get it all. Light but delicious. The drink was obviously fresh without any fillers. Sweet but tangy and I wished I had gotten the larger size. Overall the best lunch choice I've made, ever. I got to try something new, for a reasonable price, and be health conscious at the same time. A total win. Thanks for a great lunch. We'll be back very soon.
This place serves the most delicious vegetarian food I have tasted in 40 years of being a vegetarian! I can’t believe our luck in having this restaurant in Hot Springs. Marcie serves food that you would pay three times the price for in London or New York. A gourmet delight with sensational flavors at a great price. Thank you.
