Update: I recently ordered the "Little Brother" from Minton's food truck, and it was delicious! Pan fried smoked sausage on a hoagie roll topped with homemade mac & cheese.
One of our favorite spots in Lexington, and an amazing addition to our food scene; owner and owner's mother are very friendly and not afraid to take risks in its menu. Limited seating, an unusual location, but none of that matters once you try the food.
On our first trip, my wife ordered the Johnny Cakes (sweetened buttermilk cornmeal, served with toasted pecans and honey). My sister ordered the Turkey Jack (grilled sourdough with oven-roasted turkey, pepper jack cheese, and pesto mayo), served with sea salt and peppered kettle chips. I ordered the Potato and Onion Omelet (sauteed potato and white onion in a fluffy omelet topped with sliced scallions).
On our second trip, my wife ordered the Biscuits and Gravy (Weisenberger mill buttermilk biscuits topped with homemade white sausage gravy), and a side of thick hand-cut bacon. I ordered the special, which was the sweet potato hash (a plate full of diced and sautéed sweet potatoes, mixed with spinach, sautéed white onions, sausage and egg).
We cannot wait to go back!

Wow!. Went there for the first time and was very impressed! Ashley knows what it's all about. Can't wait to try her Food Truck. I will returning as often as I can!
